artichokes, lettuce with dressing made with tahini and salted lemon - this works very well

celery gratin, with cream, parmesan, breadcrumbs, walnuts; a few green beans

I think weety used 1/3 orage juice, a couple of sprigs of tarragon but he strained the tarragon out so it was subtle. this was perfect

pastry 6+3oz (3tbs water) large 600g piece of wild salmon, 2 eggs 5floz cream, some dill.

pear cake, rhubarb and ginger sorbet

sorbet consisted of some thing like 5-6 sticks rubarb roasted with some sugar, 3 pieces ginger in syrup, 2tbs syrup, 1 glucose 1.5 sheets gelatin, juice of 2/3 orange, some water - total volume 600ml. Slug of ginger liqueur. Didn't quite set firm.
