Dinner: Michael

squid-ink spag, sauce of brown shrimps, tomato, chilli, Pernod

4 oz of spag, leftover from the holiday. Sauce was one not-too-hot large chilli from WR. Took out the seeds and insides, fried with 1 big clove garlic then with 6 cherry tomatoes, finally threw in 1tbs Pernod and boiled it. Then liquidised with a little more olive oil. gentrly fried the chilli, sliced v thin. Strained the sauce, add the chilli. This was really good - the Pernod flavour was just right. Michael brought a nice Burgundy.

Sirloin steak, "chips", mushroom and porcini duxelles with truffe oil, rocket

I'd joked to Michael that we'd do prawn cocktail, steak, black forest gateau - this wasn't far off. Did the steaks 5 mins then rested then a few mins (they were 2cm thick, about), deglazed pan with port. Chips were roast wedges. Had truffle oil for 3rd time within a week.

We had the 2003 9 popes hoping that would be enough popes for Michael. Very good it was too. We discussed whether there had been 9 Avignon popes or we they antipopes. And what would happen when a pope meets an antipope. Though yes we do know what the name is a pun on.

Chocolate fondants with griottes, cream. As in Hugh FW recipe conveniently in the paper some weeks ago. Fabulous recipe, it really works.
