potato and olive pancakes, chilli pesto

a gamble that worked. I had some cooked potato leftover and I cooked another 2-3oz one (maybe 4-5 total?), mashed with 2 tbs flour and half an egg (truly this is a leftover special) and some milk to make a thick batter. Pureed 8 olives. Heat oil, fry th ebatter in 4 globs and squash the olive paste into the top. Then turn over when the bottom os fried enough. Ok this doesn't get you the olive paste in the middle (in 3 dims) but it sticks together and doesn't make a mess. And it's really good, the cakes are very light.

Roast onion squash, peanut and chipotle sauce, wild rice, chard and chickpeas.

This looks and tastes fab.
